Quick veggie pasta

For a quick Meat Free Monday Meal, this veggie pasta is perfect for the whole family.

1 aubergine
1 tray of baby marrows
400g tomato pasta sauce
2 cloves of garlic, crushed
1tbsp olive oil
1tsp dried oregano
500g penne pasta
Parmesan cheese, to serve


  1. Dice the aubergine and baby marrows, and fry with the garlic in olive oil until beginning to soften and colour – about 5 to 8 min.
  2.  Add the tomato sauce and oregano, season and leave to simmer while you cook the pasta according to the instructions on the packet. Drain the pasta; stir through the veggie sauce and serve sprinkled with Parmesan.
