
Quick veggie pasta
For a quick Meat Free Monday Meal, this veggie pasta is perfect for the whole family.

INGREDIENTS
1 aubergine
1 tray of baby marrows
400g tomato pasta sauce
2 cloves of garlic, crushed
1tbsp olive oil
1tsp dried oregano
500g penne pasta
Parmesan cheese, to serve
INSTRUCTIONS
- Dice the aubergine and baby marrows, and fry with the garlic in olive oil until beginning to soften and colour – about 5 to 8 min.
- Add the tomato sauce and oregano, season and leave to simmer while you cook the pasta according to the instructions on the packet. Drain the pasta; stir through the veggie sauce and serve sprinkled with Parmesan.
