Pizza with Pesto, Tomatoes and Mozzarella [Vegetarian]


Makes 1 pizza / 8 slices

  1. 1 pizza base/flatbread
  2. 1 Cup cherry tomatoes, halved
  3. 1 tsp olive oil
  4. 2 tbsp basil pesto
  5. ¼ cup mozzarella
  6. Salt and pepper to taste


  1. Preheat the oven to 180°C
  2. Heat olive oil in a large frying pan. Add the tomatoes and cook on low for 8-10 minutes, until the tomatoes are juicy and soft. Remove from stove and set aside.
  3. Line a baking tray with baking paper and place your pizza base or flatbread on it. Spread pesto over the base. Top with the mozzarella and tomatoes (you can pour the juice from the cooked tomatoes over the pizza as well)
  4. Bake for 10-20 minutes, or until the cheese is bubbling.
  5. Let cool for a few minutes before slicing and serving
